This was a clone of the truly excellent IPA from Tempest Brewery in Tweedbank. It was inspired by New Zealand and contains a plethora of hops from that country. I made a couple of changes, the first of which was to add my home grown hops to the start of the boil. Long White Cloud is dry hopped but I didn’t because the initial super hoppiness doesn’t last for long and the beer oxidizes more quickly.
Unfortunately this brew was characterized by a fluctuating fermentation temperature that pushed too high. It swung between 19C & 25C every 8 hours. I think I must have tweaked the Ferment PID constants in a bad way.
I had hoped that I might get lucky and avoid some the fusel alcohols that I have tasted before. Alas this was not the case. So there was nothing for it to try again with my next brew …
